Life Givers
Every Mother’s Day I am left in awe. Reminded that I am a life giver. Me. Wow! I sit in that statement, “I am a life giver” and I soak it in deep into my spirit. My daughter is now 9 years old and I still marvel at the miracle of producing a life. How powerful that is. How I never felt so much purpose. It truly takes my breath away.
When my daughter was two, I would look at her and marvel that at the ripe old age of two she was EXACTLY how God intended her to be. EXACTLY. One night as I was pondering her wonderfulness. This is what flowed out of me….

Now, Take a Note For Your Mom
Wanna make mama happy this Mother’s Day? Cook really good food for her and clean up dem dishes too! We have a 2-for-1 recipe for Mom that we are happy to let you use. Let me whisper a few words to you…..Paleo Bagel….Eggs Benedict….Paleo Whipped Cream….Strawberries and Chocolate. All of those words are music to my ears and I know they will be for your Mom too!
First off, I am ALL about Paleo mixes. I am OVER. I repeat OVER making EVERY. SINGLE. THING. FROM. SCRATCH. I’ve been doing this Paleo gig since 2010 and I rejoice that there are now LEGIT products out there for us Paleo folk. Speaking of Legit, that is exactly what the base of all of the goodness you’re about to see. Legit Bagel Mix that is 🙂
The Paleo Bagel
This bagel is no joke. It’s like you are cooking a traditional bagel. There is active yeast (yes, that’s Paleo my people. You don’t need to Google it), apple cider vinegar and water you will add to this mix and then you knead it like old school style. I told you it is LEGIT! And sure, I could just leave it plain and eat because CARBS, but I decided to give you and us a couple of yummy options with this stuff.
Enter The Benedict
One of my all time fave breakfasts is Eggs Benedict. I mean, it sounds so fancy schmancy and royal but its a tasty, messy sauce bonanza and I LOVE it! I had the idea to use these bagels in this fun way and this is how I did it.
Ingredients
- BASE:
- Legit Bagel Mix
- Canadian Bacon or Ham
- Poached Egg
- HOLLANDAISE SAUCE:
- 3 Egg yolks
- 1 1/2 T. Lemon Juice
- 3/4 t. Sea Salt
- Dash of Pepper
- 1/8 t. Paprika
- Ghee
- Chives to garnish
Instructions
- I cooked the bagels first and set them aside to cool
- Place egg yolks, lemon juice, sea salt, paprika and pepper into a mixing bowl. Using a hand mixer, mix together on low for about 10-15 seconds. You can also do this in a blender
- Then place your mixer on medium as you pour in the ghee and the sauce should thicken fairly quickly. Then set this aside
- Poach an egg and set it aside
- Slice a bagel in half and toast it. While the bagel is toasting, take 2-3 slices of Canadian bacon and slightly pan fry it
- Once the bagel is slightly toasted, you can start to assemble it all together
- First the bagel, then the Canadian bacon, then the poached egg, then the hollandaise sauce and then some fresh chives to sprinkle on top
