Day number two here of our Paleo Kids Lunchbox Ideas. Kacy started the week off right with a great, healthy, paleo lunch with coconut water to boot! If you missed it, check it out here.
What’s Inside
Tuna Salad with carrots, cucumber, blueberries, strawberries and Terra Chips! Using a U Konserve Divided Container and a U Konserve stainless round container.
This is a great one for kids, they have options on how to eat this! They can scoop the tuna salad out with the Terra Chips or cucumber as well as the carrots. They can have the chips for a snack, but the carrots, cucumbers and fruit can also be a snack. The tuna salad is made with seasonings (salt, pepper, garlic powder) and Primal Kitchen avocado mayo, yum!
Environmental Impact
I really like the idea of making small changes to make a big impact and that is one of U Konserve’s motto’s. I haven’t eliminated disposable food packaging from our lives, but I have now eliminated it from school lunches. That not only makes me feel better about our waste and our impact on the environment, but I also feel better about the kids food not sitting in plastic bags for hours and hours.

More Snack Ideas
I like to give fruits and veggies as snacks as well as some kind of sweeter treats occasionally. I found that Go Raw has some great Sprouted Bars and Sprouted Bites and Cookies besides the Sprouted Seeds I already love. They also have Raw Chocolate that my kids love. The zesty pizza bites and the pumpkin seed bites seem to be the top picks for my kid’s, although the apricot and banana bread ones were a close second, they are sort of like bites sized squares of a fruit roll up. The kids said they couldn’t really tell the difference between the apricot and the banana bread! Oh kids! If you want to give an extra special treat the choco chunk coconut chips are a good way to go, crunch and chocolate yum! Some of these do have Agave Nectar so if you have omitted that from your diet beware!
Adults too
I would totally eat this lunch. Scoop some tuna out with the cucumber and with some chips. Another idea would be to take out the divider in the container, add some lettuce and make it into a tuna salad! I love that even though it’s kid friendly it packs a nutrient punch, tastes good to me too and would keep me satisfied until the next meal. Being satisfied is so essential for kids concentration in school and for adults at work or at home!
