Veggie Tray & Chips and Dip
If there is a party at my house chips and dip and a vegetable platter is always on the menu. This Almond Roasted Garlic Dip is loved by paleo and non-paleo eaters alike! For me it takes the place of a hummus. I found a similar sauce at the beginning of my elimination diet called Bitchin’ Sauce. They have a variety of flavors and I found them at my local Farmer’s Market. After eliminating soy from my diet I gave up my beloved Bitchin’ Sauce. I’m glad I have created a delicious replacement in my Almond Roasted Garlic Dip!
Soaking and Sprouting Nuts (and seeds)
I am working on a post completely devoted to sprouting and soaking nuts and the health benefits of these processes. What it boils down to is sprouting and soaking can aid in the digestion of nuts and seeds and makes extracting the nutrients from them easier.
For this recipe I soaked my almonds for two days, changing out the water twice a day. If you’re not up to soaking the almonds you can just use raw almonds peeled or blanched. I found that after soaking, the almonds are softer. If not soaking you may need to add extra oil or water to the recipe to get the desired consistency. An added benefit of soaking is that the almonds are easier to peel!
Ingredients
- 1 Cup Soaked Almonds
- 2 Cloves of Roasted Garlic
- 2 tsp coconut aminos
- 1 Tbl. Avocado Oil or a light Olive Oil
- 1/2 tsp salt
- 1/4 C water (more or less to get desired consistency)
- A little squeeze of lemon
- high powered blender, I use a Vitamix
Instructions
- To soak Almonds, put almonds into a bowl. Cover almonds with water and add a tsp of salt. If soaking more than one day make sure to replace water twice a day.
- To Roast Garlic- slice off the top of a head of garlic, rub with olive oil and sprinkle with salt and pepper wrap in aluminum foil and place in an oven on 400 degrees for 30 minutes. The cloves will soften in the oven, then you can easily squeeze the cloves out of the paper.
- Add all ingredients to the blender and blend until smooth and mixture is at a desired consistency.
We love this dip with cut up raw veggies and root vegetable chips like Terra Chips. It is also great as a dressing substitute for a salad and it’s nice over chicken as well. This recipe is AIP friendly, if you’ve reintroduced almonds!
