Fruit Salad
I couldn’t help myself, I had one more recipe that I just had to share before the 4th of July! It is AIP and everyone loves this at a gathering. This is a really delicious fruit salad to bring as a side dish to a party or have as a side dish at your own party.
If you’re going to a party you can make this salad in the morning and it will taste even better by party time! This is a recipe that you may need to play around with a bit to get just right for your families tastes. I went easy on the ginger because I want the kids to enjoy this, but if it was just for adults I’d probably do at least double the ginger that is in this recipe! It is also a great recipe to use underripe fruits and super ripe, it helps balance the sweetness and tartness.
If you want to prepare it the night before just keep the fruit separate from the other ingredients. The strawberries have a tendency to get mushy if cut up and mixed with the “dressing”.
Ingredients
- 3 cups cut up seedless watermelon about half of a watermelon depending on it's size
- 1 cup of washed and cut up strawberries
- 1 cup of washed blueberries
- 1 lime juiced
- about 7 mint leaves chopped
- 1 tsp coconut nectar
- 1/4 tsp grated fresh ginger
- a pinch or two of salt
Instructions
- In a bowl combine the cut up watermelon, strawberries and whole blueberries.
- In a separate bowl combine remaining ingredients. I whisked them together
- At this point I usually do a taste test, I dip the watermelon or strawberry in the ginger/lime mixture to see if I need more coconut nectar, ginger or salt.
- Once the mixture is to your liking pour it over the fruit and gently toss.
- Place the bowl of fruit in the refrigerator for at least 30 minutes for the ingredients to marinate.
Notes
Another option: If you make a baby spinach, romaine, avocado salad and add this fruit salad with the lime/ginger mixture and drizzle with a little olive oil.Toss and enjoy. It is a sweet, tangy and refreshing salad! Add some chicken to get some protein too!
