Carte Blanche
I am married to an Asian dude so that gives me carte blanche to make Asian puns and jokes at my own discretion. You have been warned! Although, you know me by now that it is all in a fun spirit! With that being said, I of course needed to change the spelling of persuasion to persuASIAN to play into my punny hand with this recipe!
Moving On
What is it about lettuce wraps? I LOVE lettuce wraps! I love scooping all of the good stuff and putting it inside my little lettuce boat, rolling it up and dipping it in some yummy sauce. I have always loved lettuce wraps. I think I even remember my first encounter with them. It was a humid, summer day back on June 17th, 2001 (I’m just making that part up :)) and I arrived at a new restaurant in town, California Pizza Kitchen. I perused the menu and opted to go baller style and order an appetizer, which was the lettuce wraps and a pizza. I must have been rolling in the dough back in the day. I remember not even really knowing what a lettuce wrap was or what it was going to look like. When it arrived…heaven in my mouth. Love at first bite. I needed this in my life.
Over The Years
Even though my diet has drastically changed since my first encounter with the oh so fabulous lettuce wraps, I can still eat them! It has not been something I have ever had to knock off the list! These have been my tried and true buddies. Never leaving me, even when there was a mass exodus of food to accommodate my anti-inflammatory diet! I may have had to leave the dipping sauce behind for a certain time, but the wraps have never left me. It’s true love.
Lately…
I’ve been experimenting with different ways to make these bad boys and I have come up with this recipe that makes the whole family cheer when I tell them what’s for dinner. I like happy foodie people around my table. They are always nicer and less complainy, so once again, lettuce wraps for the win! I drew my inspiration for this recipe from my Asian hubby….you know what they say about Asians, right? Once you go Asian, your life is Amazin’! (See I told you I would whip them out!)
Ingredients
- 1lb. Ground Pork
- 1T. Lard
- 1/4 Cup Carrots
- 1/4 Cup Green Onion
- 2 T. Coconut Aminos
- 1 T. Manuka Honey (raw honey works as well)
- 1/2 t. of minced fresh ginger or 2 1/4 t. of ground ginger
- 1 t. Salt (You can use less salt if you are using Fish Sauce)
- 3-4 drops of Fish Sauce (Optional. We leave it out because my Asian husband doesn't like fish. Strange, right?)
- DIPPING SAUCE (Omit if AIP)
- 1 T. Almond Butter
- 3T. Coconut Aminos
Instructions
- Put 1 T. of lard in a hot pan. I prefer a cast iron skillet.
- Brown the ground pork
- While the pork in browning, dice up carrots and chop the green onions
- After the pork has browned, add veggies and combine the rest of the ingredients
- Cook until the pork is cooked through and the carrots are soft
- The DIPPING SAUCE:
- In a bowl add 1 T of almond butter (or any other nut or seed butter of your choice)
- Add 3 T. of Coconut Aminos
- Combine and Serve

How simple and easy is that? It’s one of those recipes that takes about 20 minutes to whip up and I couldn’t love that more! Lettuce wraps just do me good!
