It’s Bonus Day!
Today I’m going a little nuts! Yes, all week we have had lunches free of gluten, dairy, refined sugar, grains, soy and nuts and now I am introducing some variations and adding some nuts into the mix thanks to Siete Foods and Simple Mills!
First we have the tuna salad from Day 2 here:
This can have a couple variations. Wrapping the tuna salad in a Siete Foods Almond Tortilla, you get a Tuna Salad Wrap with carrots, cucumbers and some greens, so tasty. I know in Day 4 I already praised Siete Foods, but I have to say I personally LOVE this tuna wrap with the Almond Tortilla. My kids also love anything in a wrap so I can usually squeeze a few extra veggies in there without them even noticing.
It can be accompanied by some Chewy Apricot Bites for a snack from Go Raw. Here is a store locater for Go Raw, or you can purchase Apricot Bars, Banana Bread, Pumpkin Seed, Raisin Crunch and Sprulina Bars online. They have all of these in bites or bars! Their Sprouted Seeds are a great snack, I prefer the Sprouted Pumpkin Seeds and the Sprouted Watermelon Seeds. The great thing about sprouted seeds are the sprouting process helps with the digestive process so it is easier on that digestive system than seeds that aren’t sprouted.
Or you can make the meal a little more interactive by adding Simple Mills crackers! These crackers have 8 SIMPLE INGREDIENTS: Nut and Seed Flour Blend (Almonds, Sunflower Seeds, Flax Seeds), Tapioca, Cassava, Organic Sunflower Oil, Sea Salt, Organic Onion, Organic Garlic, Rosemary Extract (For Freshness). These crackers are delicious and wonderful to scoop some tuna salad onto and make a little tuna cracker sandwich! I featured the Fine Ground Sea Salt Crackers in the shot below, but they have three other flavors as well. Kacy LOVES the Rosemary Sea Salt Crackers and my kids (that don’t eat paleo, although I feed them a ton of paleo meals, enjoy the Cheddar Crackers), the Tomato Basil crackers are also great as a snack, they are super tasty.
Also a great snack is a Rise Bar. They now have mini Rise Bars as well, perfect for a kids school snack! They don’t have my favorite the Sunflower Cinnamon in the mini version, so please Rise Bar, make the Sunflower Cinnamon in the mini please!
Here’s another Bonus! A hard boiled egg sliced with the above sides. Carrots, cucumber, grapes, blueberries and banana chips, with a Sunflower Cinnamon Rise Bar.
A small variation can make this a slightly different lunch as well. Using Primal Kitchen avocado mayo and some seasoning (salt, pepper, garlic powder) to make the egg salad, just add some Simple Mills Crackers and abracadabra an interactive, make your own egg salad cracker sandwich!
Of course I’ve used the U Konserve Stainless Divided Container again, with a small round U Konserve container.
If your school allows nuts I say try Simple Mills crackers for a snack or to help make your childs lunch interactive. What kid doesn’t like playing with their food, right?
